What did you cook today? (2014)

Last night I had a group of 8 over for dinner. I grilled two large salmon (each was the whole fish) and served with some grilled veggies and a lentil salad. For dessert we have a mix of mini dessert shooters, strawberry shortcake, creme brulee and a chocolate hazelnut.
 
I was tired last night and didn't feel like doing much of anything. I made some large pasta shells and a homemade sauce. The sauce was a mix of tomatoes that I pureed, capers and olives along with some spices to give it some heat. It isn't amazing but a variation of something that I tried on a whim at a restaurant years ago so we hadn't had it in awhile and it was very easy. I made a quick green salad to go with it.
 
Reeeal lazy today... Egg and margarine cooked in the heat of freshly-cooked pasta. Salt and pepper. It was like a cross between Carbonara and Hollandaise.

Well, I liked it. First, I'm never going back to pre-packaged carbonara sauce ever again. Second...I'm never giving up pasta again. What have I been thinking these past few days, this cutting out carbs nonsense?

And egg-based sauces are technically protein anyway, especially with a bit of cheese along with the pepper...I'll try this again with cayenne pepper and some cheese, maybe some real butter. I wonder if there would be a name for that sauce. If not, I'll call it either Carbondaise or Hollanara.

Also, I boiled the pasta in the metal strainer, in the pot. That's how lazy I was. So, I just had to lift the strainer out by hand (wrapped in a towel, with the help of some tongs) and all the pasta came out with it, already drained. I also cooked this pasta double-covered (with a smaller cover over the strainer, and a bigger cover over the bigger pot, and it didn't spill over.
 
I skipped breakfast and went right to lunch. I made a grilled cheese and had some carrot sticks. For dinner I roasted a chicken and combined it with some brown rice. The best part of the meal was the sauce it was just lemon juice and herbs but it gives the dish such flavor and is low in calories.
 
I will be making veggie pizza tonight. That was supposed to have been yesterday's plan but I wasn't feeling too well.
 
Today for lunch I am going to make salad and serve it in lettuce cups. Dinner is a bit heavy this evening which is why I am passing on bread with lunch. For dinner I am going to make rigatoni with a homemade bolognese sauce. I'll also make a large salad to go with it.
 
Well, I haven't cooked it yet, but I'm about to get changed, do some washing up, and make a lot of pasta bolognese because I am starving! Probably going to save some of the sauce to reheat tomorrow, since I still have a half packet of mince left, and I don't want it going off and being a waste of good food. It'll mean I don't have to cook properly tomorrow as well!
 
For brunch yesterday I made banana pancakes and fruit salad. Dinner was quick and easy, which is something I usually don't do for Sunday dinner but I was tired. I made my own version of chicken with broccoli. It turned out pretty well, I just didn't make enough.

I am so jealous of your brunch!

I'm making spicy potato wedges and sticky barbeque chicken tonight. Yummy, and so good for you too!
 
Vegan pate for my OH's lunches this week... then blackberry & apple fruit leathers which are in the dehydrator and finally, our evening meal, walnut & poppy seed dumplings with a béchamel sauce and braised fennel with what is meant to be white chocolate only I didn't have any so have used dark chocolate instead - should be interesting !
 
Spent most of the afternoon cooking up a huge batch of Aromatic vegetable pasties and some more blackberry & apple fruit leathers. Possibly going to make some Apple & Rhubarb fruit leathers later on today when the dehydrator is free again...
 
Breakfast was just a hardboiled egg on a piece of 7 grain toast with a side of tomatoes. For dinner I made turkey meatballs and rice. The rice was really an afterthought for the meal and just something to add a little white carbs to the dinner. The meatballs were delicious, I mixed a little fennel in with them and the flavor really made them unique.
 
Well, I'm going to be eating dry rice krispies for breakfast again I think. For dinner however, as long as my chicken is still good, I'll be making sticky barbeque chicken, with spicy wedges. Yummy!
