My wife sent my daughter out to get some groceries that could be made into future meals. She came back with frozen fish, frozen (cooked) shrimp, frozen vegetables and no fresh ingredients. My daughter wanted me to make something from what she bought, so admittedly this lo mein was partly out of spite. But, it turned out to be pretty good. I added fresh mushrooms, scallions, and garlic, but that was it for the fresh ingredients.
 
We had one of GF's sons over last nght..I got the deep fryer out and we had french fries, stuffed jalapeno poppers, smoked chicken wings, onion rings, and some crispy vegetables and cole slaw salad..It's been a while since I had fried foods in such abundance..to tell you the truth, it was too much...everything was done properly, it just doesn't agree with me any more...he took home a huge container of the left overs...
I agree. And it doesn't reheat well in general, other than the wings. The poppers might be okay as well, but I know how awful reheated fries can be.
 
Lunch at Penn Station East Coast Subs, a place we haven't had since before the pandemic.

It's not right to call them fast food, because everything is made fresh to order - even the fries aren't cut until you place your order, so the food is fresh and (scalding) hot when you get it. Even their lemonade is fresh-squeezed, made in the shop every day.

MrsT had her favorite reuben, which she says beats any deli reuben she's ever had, no contest and I had the pizza sub, which is pepperoni, smoked ham, provolone, Parmesan, oregano, pizza sauce, and onions:

That kind of freshness doesn't come cheap, though. Two small sandwiches, two small fries, and one small lemonade (for MrsT) was nearly $25US...but it was worth it. McDonald's it ain't!
 
Sofrito doesn't usually have cauliflower and carrots.

Perhaps, not usually, but my understanding is that variations around the world may have just about anything in them. And they may have different names too.

I googled 'giardinieria' and set myself straight on the differences.

My meal for today is a repeat of yesterday's Quinoa, Beef and Bean Wrap.

I made two of these and they were huge, too big to eat both in the same day. And since they get served cold, I refrigerated one and had it for a meal today.

I am totally in love with British bakery and confectionery and this cake particularly. It is by far my favourite. The jam was homemade, by the way.

Oh my...you have everyone 'loving' this here! Spanish paella and British Victoria sponge - an unexpected combination of dishes beautifully executed.
