I have done that a few times myself.I cooked the goulash (image here: https://www.cookingbites.com/threads/goulash-a-question.8392/). I am not 100% impressed with it but it was OK. Maybe the recipe that I used was unsuitable for pork. I ate it with rotis.

That looks almost like our flour tortillas. Try using those with your Quesadillas.

Roll your roti a bit thinner and you will have an excellent tortilla.
Much better than those way too thin flour tortillas you can buy.
