What did you eat/cook today (January 2017)?

The first thing I've eaten today at 4.30 pm - a rocket (arugula) and tomato sandwich. Total calories 120. Rocket, low-cal bread, low-fat marge, salt, thinly sliced tomato. Rocket is a surprisingly satisfying leaf. This leaves me with quite a few calories for tonight! :D
 
Went to the pub this afternoon so decided not to bother cooking.

That would be vegetarian....... if it wasn't for the pork!
 
Today I made stuffed marrow in two versions. One vegetarian with Quorn mince. One with beef mince. I used onions, yellow pepper, miso, a bit of marmite, tin of tomatoes, tomato puree, ground coriander, paprkia, garlic, black pepper, red wine. This is the Quorn version. They are to be baked later with cheese to melt on top.

I like rocket as well. It sounds like you are on de-tox diet!
 
I hope this counts as I made it last night but didn't get time to log on to tell you what I cooked. This is just a bit of the leftovers. It was some mixed mushrooms which I fried in butter with chopped garlic then I added a bit of marmite. I got inspired by the recipe comp. :D We had it with steak and some smashed new potatoes.

Shared with my husband and cooked several days ago when I made 5 of them. This has been in the fridge for 3 days and was photo'ed cold as well. I have about 1/3rd and he has 2/3rds served with a rice/quinoa and veg salad which I didn't photo because it doesn't look that appetising on the 3rd day but is amazingly tasty!

Its made with my soft shortcrust pastry only this time it was white flour because I picked up the wrong packet and couldn't get back into the pantry due to furniture in the way whilst 2 men struggled to carry the woodburning stove through the kitchen... or at least they were going to in about 1/2 hrs time...

It is a roasted courgette, roasted onion, roasted garlic, roasted sweet potato tart/quiche (no cheese so I don't really know if it is a quiche or not, we call it a quiche).
