OMG. Italian American men and their love of stinky small fish! Just sayin' because I live with one...

Not the stinky small fish, BTW. Just figured I had better clarify that.

I just pulled my quiche out of the oven. It's sausage, bacon, peppers, shallot, mushrooms, triple cheddar and spinach. It's breakfast at 4:15 pm lol.

Your photos as of late are particularly sharp and appealing. Did you get a new phone or are you just trying different angles and close-up?
Thank you very much! No new phone, not really doing anything differently - maybe it’s the crap lighting actually doing some unintended good?
 
My Mother's birthday is tomorrow and we have this adorable little place just opened up about a year.
A month ago they decided to open for Sunday afternoons and only offer High Tea or Afternoon Tea, lovely!

Hey thank you for the compliment. I don't have a recipe. I didn't measure anything but I can try to guess amounts.

I cut 3 strips of raw bacon into bites sized pieces and rendered it until crispy, then removed it from the pan to a paper towel. Then I put about 1/3rd lb of lean sausage in the pan with diced peppers, shallot, and mushrooms and cooked them until done. I whisked 6 medium eggs with a generous pour of heavy cream and a pinch of salt In a bowl. I cut up a small handful of fresh spinach into the pie shell, then added the cooked sausage and veggies with a big handful of shredded cheese, then poured the egg mixture in and put the bacon on the top, poking it down with a fork. Baked it at 350F but I'm not sure how long, probsby 45 minutes. I checked it when it smelled done and it was ready.

Did you use a water bath?
