I made homemade egg noodles yesterday and made tuna casserole with some of the fresh pasta. I used my sourdough starter discard in them and they were so good!
Sourdough Pasta

Here's before I cut them. I hand cut some and I used my KA fettuccine cutter for the rest, which I froze.

I live the idea of sourdough pasta. I'm surprised it's not on sale commercially. Maybe it is but I haven't seen it?

I've never seen it. This was very easy to make. I liked it so well I think this will be my go-to recipe from here on out. I just recently got a foodsaver machine so I am going to start making large batches of different size/shapes to freeze. I used to always make it with semolina flour but this recipe called for the starter discard and just regular AP flour. I am glad to know I don't have to spend the extra $ on semolina anymore, although I have some I need to use up.

You can freeze flours so that they don't go stale.

I wonder how one would make such a thing. Sourdough is bread that is leavened with yeast that includes a sourdough starter. Pasta isn't leavened. I'm curious.
