Texas chili,
Doggers Mate. Many years ago whilst in the US I watched a cooking segment of a morning show. They showed a VT clip of Liberace cooking Chili. Then a chef made chili. Apart from Liberace the only thing I remember and use when I very rarely make chili is this chefs words. Authentic chili should us small cubes of beef not minced beef, is that correct ?

Yes and no. Texas chili has evolved over the years. The original "Texas Red" used beef cut into cubes, about a half-inch, or so. Today, some people still use cubes of beef, but you will mostly find ground beef in chili here in Texas. I generally use a VERY coarse grind, so it is still pretty chunky. Since chili is usually made with cheaper, tougher cuts of beef, if you use cubes of beef, you have to simmer it a LONG time to make it tender enough to enjoy.

The real Texas Red also doesn't use any tomato, and NO beans, period. Only chilies. But, not many people stick to that these days. The chilies and seasonings have stayed the same, for the most part.

So, yes, the original "real deal" would be made with small cubes of meat.

The beef we get here needs a lot of simmering whether it's minced or cubed. As the majority of Thais are unlikely to eat beef it's very difficult to find decent quality. I shall be cooking a beef stew next week which will be cubed beef browned and then simmered with onions in stock for around two hours (carrots added after about 1 hour, potatoes added 30 minutes later.

For chilli, 95% of the time I use minced beef and it is the norm for me to cook the dish for at least 90 minutes. I don't add beans.
