Same here. Don’t mind some texture in a stir fry but I still tend to add carrot early as hot raw carrot is wrong.It's got to be one or the other for me, either raw or cooked to death.
That crispy chili oil is my favourite
Went out mushroom hunting yesterday with my son. He loves to get out amongst the trees and was quite interested in learning to forage but he doesn’t eat mushrooms.

I panfried some in a hot dry pan then added, butter, garlic, salt, freshly cracked pepper & chilli flakes.
