What to do with celery leaves

Is that the leafy part of the Celery? That makes an awesome, delicious garnish.
I LOVE using the tender celery heart leaves in soup (not making the stock) and salads (tuna, mac, potato).
When I was a kid, the celery came into the supermarket with all the nice leaves still on the stalks. The clerk would cut off the top leaves and put out the celery just like that. The leaves/ celery tops got thrown away. My mom would ask the produce manager if she could have the discarded leaves. He would give her big bags of leaves for free. That would be dinner. She would cook it like she did escarole and beans. Just oil and fresh garlic beans if she had them. YUM. You can't get celery tops anywhere. Now celery comes in already chopped down to the stalk top in bags now. Even farm markets have the celery tops chopped off.

I'll be having to grow my own to get the leaves. The looks I get in Walmart going through the celery packages to see which one has the most leaves! 🤣
Next time you buy it, cut the bottom off and put it in water. Most likely it will grow roots and you can plant it. I've done that a few times.

I've done that too. I cut it off and plopped it in a shallow dirt hole with some water and it started growing. Gets pretty hot here to expect a reasonable harvest.

Maybe plant in early spring? It might not make it past June but if your just planting a cutting it's no big deal and you can replant another in September.

Yes, that's a terrible shame, isn't it?
I discovered (about 10 years ago) that beetroot and radish leaves are also divine. I'd go to the farmer's market and come back with a huge bag for free.
 
Over here celery still comes loose with its leaves. And it is often that big you can't get it into the salad drawer or across a shelf in the fridge.

If I'm using it for a blended or pureed soup that has celery in it, then I'll use the leaves. Otherwise the leaves tends to end up in the compost.
