What to do with celery leaves

Yep. But a lot of people find the natural taste of celery too strong and bitter. It shows here that they don't do it in Australia. The flavour is a lot stronger.

For the home garden you can actually buy naturally self blanching celery ostensibly called Golden celery but that's too expensive for the commercial scene.
Found it at my seed supplier but it's just too hot here unless I've got an environment controlled greenhouse. 🙁

No it's a gardening term. They deprive it of light by forcing the celery to grow in a tube (which also stops it spreading out which is how it grows naturally. It needs a minimum of 3 weeks to make it less bitter and sweeter. It also is why in the pictures above the celery is more yellow than green.

Ahhh I see. I don't know many gardening terms, apparently. I know terms like "weed" and "fertilize" LOL.

Not a huge fan of Celery, but when I do buy it, I save the leaves for stock (along with other bits & pieces).
I kinda like it raw in say a Tuna, Chicken or Pasta Salad ... UHHHH! or stuffed with Pimento Cheese, YUM!
The next time I buy "flavored Cream Cheese Spread", I'm going to add Green Olives stuffed with Pimentos to schmear in the Celery Sticks.

I LOVE using the tender celery heart leaves in soup (not making the stock) and salads (tuna, mac, potato).
When I was a kid, the celery came into the supermarket with all the nice leaves still on the stalks. The clerk would cut off the top leaves and put out the celery just like that. The leaves/ celery tops got thrown away. My mom would ask the produce manager if she could have the discarded leaves. He would give her big bags of leaves for free. That would be dinner. She would cook it like she did escarole and beans. Just oil and fresh garlic beans if she had them. YUM. You can't get celery tops anywhere. Now celery comes in already chopped down to the stalk top in bags now. Even farm markets have the celery tops chopped off.
Not everywhere cuts the tops off of celery since I can buy it that way where I live in the States. I'm surprised about the farmers markets, that's just criminal!

My cousins in Phoenix always used Tillamook and when I went on visits I became fond of it (mostly just the regular cheeses). Last year it became available at some grocers in my area so I think they are attempting a nationwide expansion. Maybe it will be available in your stores soon.
