My wife used to hate pork chops. I learned why when I ate dinner at her parents' house for the first time: they incinerated everything. Nothing is cooked enough for them. Her dad would even (I'm not making this up) cook ham for several hours before he'd let anyone eat it; it seems that he thought the pinkness meant it was still raw. He used to refer to it as "the uncooked ham".

You can see why she might have developed a dislike for pork chops. You really need to keep an eye on them so they don't overcook, even when you're not trying to evaporate every drop of moisture in them. Now, she likes pork chops when I make them, but she's still skeptical about ordering them in a restaurant. And, if she finds out that someone else is making them, she finds a polite way to offer a change to the menu.

I'll have to ponder that for awhile. Off the top of my head for right now, I didn't hate lamb but I didn't love it up until about 4 years ago. My mom used to make leg of lamb when I was a kid for holidays and it was okay. My DH absolutely loves lamb "lollipops" (lamb chops cut into individual chops from a rack of lamb) and would order them regularly when we would go out. He would always offer me a bite and I just didn't think they were special. Several years ago, I decided to buy a rack of lamb and cut it into lollipops for him (it was either Valentine's Day or his birthday) and I put together a great marinade after doing a lot of research (no mint or rosemary in mine TVM) and made them for him. I was going to have something different, can't remember what, but I tried one that I cooked and I became a fan. But I still won't eat them at restaurants, only if I make them.

I hated collard greens because of the amount of vinegar in them. Found a recipe that made them actually taste good!

Craig hated chicken fried steak and spaghetti pie because of the way his family made them, shoe leather for the CFS because his mom and grandmom cooked it way too long. I have no idea what his father did to spaghetti pie. Took me years to get him to try the way i made both. Now, he likes both.

Ahh, yes! My grandmother overcooked mustards, collards, and all greens. As an adult I found that they didn't have to be cooked to death and could taste good.

Oh, they get cooked to death, as Craig likes them soft. But, the onions, garlic, beer, bacon, molasses, and very limited vinegar make up for that.

I used to hate blue cheese. My dad would always buy some for Christmas and I couldn't stand the smell (rugby socks).
And then, all of a sudden, I tried it again and just loved the stuff. Maybe it was because my music professor at uni offered me a glass of port with it... and then, maybe not.
Fish. The only fish I ever ate was fish fingers.
Then in about 1977, I began dating this absolutely ravishing Czech girl, and she loved fish - so I tried it (the fish, not the Czech).Soon after, I went to a fish restaurant with her, and ordered something really unusual , like turbot, or halibut. Loved it! Couldn't understand why I'd never eaten it before, but it might have been because my mum only cooked chicken.

Try cooking collards and season with garam masala and aromat!

Spinach....
Didn't help having an older brother sitting opposite me at the table who hated spinach and made it clearly visible to me... It was just a limey mess in my opinion.
Then in my late teens, I got invited at friends and he made lasagne with spinach inside. Can't offend friends, so I ate it and it was OK.
Around the same time, someone else made spaghetti with creamed spinach, bacon, garlic and mushrooms. I took a very reluctant first bite (same reason as above) and it tasted great!

Then chili's as a kid. I also preferred pasta over rice. That got turned around when I got a bit older

My folks used to cook veg until really soft so I would not eat cabbage or sprouts for years. TVC and I tried many different foods over the years and discovered that if cooked properly they are actually nice (sorry mum and dad).
At Christmas I ate and annoyed mince pies for the 1st time in my life....that I don't understand :scratchhead:

Can’t think of anything, apart from peas and some school puddings I think I eat pretty much everything (coeliac nonsense aside) but there are a few things I dislike and they’ve never really changed. That generally has to do with the way it’s cooked not the ingredient.

But it will be a cold day in hell before I ever eat frozen (then boiled) mixed veg again… shudder.
