Cryptic food and drink

@SatNavSaysStraightOn & @Duck59, my latest clue Crackers, claret and French cheese (8) is a bit tricky. Its possible you won't have heard of the cheese
I currently can't see 8 letters in any 2 words. Else I've to choose 2 words and drop a couple of letters? Unless in taking crackers and rearranging to a French cheese but that didn't feel correct.

The previous one (solved by @Duck59) Cheese, badly made & lacking finish (8) is easier, I think.
It's a cheese, got that. after that I can't even decide what I'm meant to be doing, sorry. 8 letters again and where? No idea.

Look at the '&'. What is the name of that logogram? Now read the sentence again. Clues are always logical.

I apologise for the pedantic approach, but would argue that French 'and' is reversed in the answer.
 
Tricky one...if you're using an anagram of claret and then another word in a different language, it can get a bit awkward. Clearly, there is an anagram indicator, but then the anagram becomes a bit of a mixture. I'm trying to think of how one could clarify it.

Something like that. A bit rubbish, to be truthful, but my brain hurts from fighting with Azed today.

I don't see it matters as the point is that the letters of the two words are mixed up. I mean, if it was 'and' in English then it would be OK wouldn't it? I'm not explaining this too well!
 
I just felt that it would be clearer as the 'and' part came after the implied anagram. Something like:

Cartel, dodgy and French, returns cheese.

Neat!

I suppose it happens that the 'and' part could be read as coming after the implied anagram - but I saw it as mixed up, especially since there are two instances of the letters in question in the answer.
 
I was pounding my shrinking brain today to come up with a clue for Pigface, er Azed, so I was in clue compilation mode. I thought of something eventually, but as my name isn't Manley or Dr Something, I won't get anywhere.
