I made those.
I challenged myself when I saw them at the grocery store for $5 with two of them per package!
So these were really good, thanks! I used spinach, mushroom, orange bell pepper, jalapeño, white cheddar, and bacon.

I do like that company, though. All their products come from humanely raised animals. I like them so much I bought stock in it!

I'm sure fresh, homemade tastes better though. Also looking at this recipe:

Did you use a muffin tin?
I used the recipe in my original post above (see cook's notes-they're mine) and I used OXO silicone muffin cups in the IP.
They popped right out of those puppies, no problem at all.
I cheated on the Bacon, as I like to keep packed pre-cooked Bacon bites in the `fridge.
Not as pretty as the others, but tasty all the same.
DH said that this is a keeper, so I'll be make a bunch for the freezer ... made for an easy-quick breakfast for him, as I needed to leave early and pick up my Mom to take her shopping and lunch.

Awesome! I cheated on the bacon (kind of) as well, because I bake it in the oven 1 lb. at a time and then keep it in a ziplock bag in the refrigerator. I had just cooked a pound last night (topped my baked chicken and mac and cheese with it). I only needed 2 pieces to make these so it was good to have it already on hand.

I also used silicone muffin cups, but yours are super cute!

My husband loved them too. I have to work early tomorrow so he has 3 leftover to eat. I am not sure about freezing them, I know the recipes state that you can but I think I would rather just keep them in the refrigerator and use them up within a day or two of making them.

Edited to add that I missed your recipe in the OP but I just scrolled back and clicked on the link. The light green often doesn't stick out to me in these threads. At any rate, I don't have an Instapot so I am probably just going to stick with using my Emeril air fryer/toaster oven. It worked out just fine! Although, the microwave method was super fast (just over 1 minute) and the one I made in it was just as tasty as the others.

Your basic Egg, Bacon and Toast, but did it differently today.
I basted the Eggs in the rendered Bacon grease.
I used Sour Dough Bread that one of my Gal Pals brought back with her from California.
Used Salted Butter for the very first time ever!
Ate the cooked Egg White while dipping my Toast into the yolk ... OH MY GRAVY ALL OVER (that's OMG in my world) !!

To the Mrs breakfast is the most important/best meal of the day, she is away for a few weeks so made some Arepa in her honour... would have made some photos of them filled but was too busy eating... first attempt

I'd think karadekoolaid will be familiar with these. How do you fill them? Do they form a pocket?
