I love this place, even though it’s very basic. It’s very, very local (not that we’ve ever had tourists here), so you see some real characters that you won’t see at any of the chains, and nearly all the workers are high school kids, earning money for college.

No, that's not how most people (in the US) eat toast. The butter side is turned in so that it doesn't smear on the plate I suppose. It might not have arrived on the plate like that, it could be that the dry side was down on each slice and the buttered sides were all stacked facing up, I dunno. I would guess he eats it one slice at a time (that's how everyone I know eats toast) unless he shovels the eggs inside as a sandwich. But then I suppose he would have just ordered a scrambled egg sandwich if that were the case.And you eat it like a sandwich?

Think about making and serving a lot of toast that you’re going to cut before you serve it - instead of cutting each piece separately, you’ll just put the two buttered sides together, then cut it and toss it on the plate. Also, keeping it together like that keeps the butter off the back side of the toast and helps it melt.
