Haven't a clue - I just get a box of 6 mixed size from Riverford every week. I've noticed though that the paler the shell, the darker the yolk.

I am still not a consistent breakfast person but was happy to prepare this for my "two kids." It was my version of a kind of omelette. I like to set my own rules in the kitchen.
It looks very like an omelette. Why is it a 'kind of'?

Those pikelets were a little solid in the centre after being under the grill for 4 minutes each side. Today I put them upside down under the grill for 4 minutes then turned them over and used the blowlamp to the top. They ended up hot, with a "crispy" top and still fluffy inside. Far superior.

Yorkshire folks have a reputation for naming stuff different from everyone else in the World. Scallops for example.

Eggs Benny with ham in a local cafe. I wish the "sour dough" had of been a more rustic crusty example. Not a fan of fluffy bread really.
And yes, that's 3 eggs, no idea why, and yolks were not runny enough.
