The CookingBites recipe challenge: non-sparkling alcohol

Hey...guess what? That sauce came together a lot better than I expected. Here it is:

Recipe - Calvados Chicken

Chicken breasts in an apple-mushroom cream sauce, featuring our old friend, the calvados (apple brandy). I'm getting some mileage out of my bottle of that, that's for sure.

Elegant enough to serve at a holiday dinner party, simple enough to enjoy on a weeknight, and what I really love is the slightly sharp taste the tart apples bring - such a lovely my-but-the-weather's-turning-colder-isn't-it dish.

MrsT didn't have much to say, and when I asked afterward how she liked it, because she never commented on it, she held up her sparkling, licked-clean plate, and said, "Oh yeah, I must have hated it, huh?"

Good enough for me!

Here's a curious little recipe - which actually works quite well: Carrot & Asparagus Strudel
Originally, this was designed as a vegetarian appetizer ( if you use vegan pastry and sub agave syrup for honey, it's vegan) cut into little bite sized pieces. If you decide to do it like that, then you need to divide the pastry into 2-3 parts and use less filling, accordingly. You should be looking for a "sausage roll" type format.
The wine adds a little sweetness and acidity to the dish, and the juniper berries in the gin blend wonderfully with the sweet carrots.

I have given it a lot of thought, runaway from a decision now than one, twice, three times and tried hard to decide on a winning recipe and....


TastyReuben congratulations...

I am intrigued by several of your recipes and with adaptations, could see myself trying.

Recipe - Oatmeal and Berry Cream (winning recipe)

Recipe - Braised Pork Loin Chops with Apple-Cream Sauce I'm thinking tofu... but you did remind me of a night in the middle of nowhere in Poland in a workers hostel where we had to eat what we were served. English and Polish lacking... the owner must have been a professional chef at some point in time because my OH commented that it was the best pork he had ever eaten. And even I enjoyed it. It was the best dish of any of the meat I had to eat in that tour cycling down through Eastern Europe.

Recipe - Whiskey Milk Punch (Scailtin) this one also reminded me of my childhood and a drink I really enjoyed.
