Well friends, it has passed the midday on the 23rd time frame for me to judge the entries! Sorry for the delay - sick baby (right before Christmas - lets hope it's just a 24 hour bug!)

I was really impressed with a lot of the recipes posted, and honestly you've all given me a LOT of great ideas to use up my leftover Christmas ham, or just for ham in general!

But I have to award the winner of the challenge to the most recent entry which was the great post by @morning glory of the chicken and parma ham ballotines - I thought that they just looked fabulous, and that you did a great job of explaining the process involved in making them and having it seem much less intimidating.

I'm hoping so too! We've had this 24 hour bug going around locally, so I'm hoping she starts feeling better later today...it just started in the wee hours of the morning Japan time, so needless to say, a lot of coffee is on the agenda for my morning!

And hey, I thought it was interesting using any type of ham - whether it was Christmas ham or parma ham - we like both in this household! You did a great job and it's a well deserved win!

I've lived through four babies and all of them got sick sometimes. Its the worst thing. Mostly, they puke a bit and then recover! You are the one who really suffers.

Regarding the ham. You can't really use any ham. Sorry if I misled you on that one. It has to be really wafer thin ham like prosciutto. You can use streaky bacon however: put 2 or 3 bacon rashers at a time between two sheets of cling film and roll with rolling pin until wafer thin.

I forgot to enter my Baked ham with honey mustard and apples. Still I am putting it here in case we have some big competition and I end up being "the wild card "who takes home the bacon". Congrats Morning Glory. I'll be coming guns blazing in the new year. Be forewarned.

I'm sorry for my wording - I meant that I loved that people gave me ideas for all sorts of ham, and found it interesting that people gave recipes for full hams, leftover Christmas hams, parma ham...the list goes on!

Sometimes I re-read my posts after I've hit "post reply" and think oh boy, I haven't made much sense when I've typed it out!!
 
@morning glory it is entirely up to you as to how long you s want to run it for but generally from experience, anything more than 2 weeks will lose momentum and interest and be hard to manage. But I would also expect a number of new members to the site over Christmas week and the first week of the New Year as new year resolutions and diets kick in which may expand the readership...

You can obviously pick any ingredient and it does not have to be a ' solid ' ingredient, it can be anything that is used for food and drink... You potentially still have Christmas and New Year parties to take into account...

So it is entirely up to you. A shortish one may not work well with the quiet days coming up (over Christmas Day) but similarly a long one could also not work because anything 'festive' related will be over and done with in the New Year...

I'm pretty sure all I have done there is waffle and not really give you any help at all! :laugh:

But one thing is certain, I'm going to miss your photos for this round of the competition!

You have forgotten that I try to make some of the submitted recipes myself and photograph them - remember the aubergine torte?
 
The new CookingBites Recipe Challenge ingredient is the orange. Its a fruit somewhat associated with Christmas (the orange in the bottom of your Christmas stocking), candied orange peel in mince pies, perhaps orange slices with spices in mulled wine or punch. But I'm also looking to January and thinking marmalade! The bitter Seville orange traditionally used in marmalade is only in season for a few short weeks in January. Any recipes for sweet or savoury dishes (or for drinks) are welcome and I will endeavour to cook and taste recipes which are unfamiliar to me.

The deadline is midday Tuesday 5th January (UK time). I'll post a piece about the orange when I get time to write it up - hopefully that may draw people's attention to the competition.
