I suspect my ' judgement ' is a touch early, by a few minutes, but given none of you are online and I have to go out (it's almost 9am on Sunday here in Australia) I'll close the competition now and announce the winner.

It's going to come as a surprise to a few and I have to say that @classic33 has put quite a few interesting recipes in this time including Vegan Spiced Rice Pudding, Orange Rice Cake along with @Caribbean girl's Elegant Wild Rice Soup. @Smokeydoke's Greek Lemon Chicken with Spanakorizo sounds curious but didn't quite do it for me sadly. However, @classic33's Guinness, Beef, Rice and Mushroom Stew looked really good and fairly simple to make vegetarian, if not vegan completely and looked great and as such I have decided that that is the winner. Congratulations @classic33 the competition is back in your hands!

I am not that familiar with apricots and I don't think we get them here that often, if at all. I believe winterybella can help me out here. I could be wrong. Anyway, I am sure I will find some interesting recipes to put up containing this ingredient.
