If you are vegan and use cashew nut cream a lot, then it won't be a difficult recipe to follow, but I guess so most it won't be easy because of the need for a high speed blender than can actually liquidise the soaked cashew nuts. Sadly these blenders are not cheap, but are invaluable to someone like myself, allergic to dairy and using cashew nut cream in a lot of substitutions.

Picking a winner was difficult, so many recipes looked delicious. But the one who edged everyone out was @Caribbean girl's Ginger and Cilantro Baked Tilapia. I think she made best use of the ginger and that tilapia looks mouthwatering.

So congratulations to the winner, @Caribbean girl! And congratulations to everyone else, because we all win with all these great recipes.

Well I express my gratitude as being chosen as the winner for this round. As I don't see fish featured in many of the entries for the challenge, I figured it would be a good idea to enter something containing fish.

Anyway, with no further ado, as it is my turn now to choose another ingredient for the challenge, I choose corn as the next ingredient. I now look forward to some great entries from all of you. Entries close on October 23rd at 12 noon UK time.
