The CookingBites Recipe Challenge: Nov 2015-June 2017

I was expecting more puddings, when I gave the ingredient. Baking seems to have come to the fore however

Apricot Upside Down Cake from @SatNavSaysStraightOn. Would that be the right way up I wonder?
Apricot Oatmeal Cookies from @Caribbean girl
It may be tagged as vegetarian, but it might tempt me to try them.
Mushroom, Apricot and Coriander Sausages from @SatNavSaysStraightOn.

However, we await the the winner @Smokeydoke, to announce the next ingredient
Light Apricot Cake

And it's nice to see someone else(@winterybella) entering drink.
Apricot Lemonade Freeze

@morning glory, one for you. Ingredient: water, but it cannot be a drink.

Congratulations @Smokeydoke! I thought your winning entry was great. :woot::dance::dance::woot::bravo:Over to you to choose the next challenge ingredient (to see what's been already chosen see the top post in this thread) - although it probably doesn't matter if its already been chosen. There are always plenty of recipes out there!

Oh wow! Thanks everyone. I'm glad you enjoyed the cake. It's definitely going into my breakfast rotation. So light. And so easy!

I guess I have to choose an ingredient. Well, I just bought a bag of fresh ginger and I have no idea what to do with it, so.... GINGER it is!

Ginger in any form works; fresh, grated, powder... go crazy.
