The CookingBites Recipe Challenge: Nov 2015-June 2017

Great idea. I love sweetcorn. Can I assume that frozen sweetcorn (or tinned) is fine? Also whatabout maize meal /maize flour? Just wish to clarify with it not being in season here.

You can use any kind of corn, so frozen or tinned corn is fine. I don't know if I've ever heard of maize meal or maize flour, but I do know about corn meal and corn flour. Could that be the same thing? Anyway, yes that would be accepted too.

I wish I understood the attraction. To me its just too sweet and dominates the rest of the dish. I can accept it char grilled (just about). My son loves it in any form.

In my country, roast corn is the most popular way of eating corn. It is a cultural thing. However, I do like to use the tinned sweet corn on occasion as part of a side dish, or mixed into a toss salad. Haven't had it in a while though.

yep - corn and maize are interchangeable across the Atlantic though not necessarily UK-US, I think it is actually Spain to UK/US!

We just have to be careful with corn flour (actually maize flour and yellow) and cornflour (which is a starch in the UK and a white powder used for thickening all sorts of sauces with and can be switched out with wheat flour is thickening sauces).

Also you may find this useful - you being plural and everyone, UK to US and US to UK definitions of various food items. Please fell free to let me know if anything is missing or incorrect via the use of the report button.

No photo yet, and there may not be because I took a nasty fall earlier and have a decent size lump missing from my knee (larger than my thumb nail and totally missing rather than just grazed). I may well have to visit my GP.

Anyhow... my entry

Hey folk, I'm looking for some more entries to judge. The entries seem to be slow in coming in this time around. Just a few more days now before the closing of this challenge round. However, I like the entries that I have seen so far, but am on the lookout for more.

We are going off line (potentially for two days). I have two more entries planned. Where is @winterybella?

When you say 'we're going off line,' do you mean the Cooking Bites forum? I was wondering where winterybella was too. Have not seen her on in a while. Probably busy. I will look forward to your other two entries.
