The CookingBites Recipe Challenge: Nov 2015-June 2017

My wife informs me that it is unlikely there'll be any in the shops at the moment. However, she is going to the supermarket today and will check (I'll be watching Formula 1)..

Any form of vegetable masala can include cauliflower. I make one with cauliflower, potatoes, peas and tomatoes. Or maybe okra and cauliflower bhaji?

No cauliflower in the supermarket (the expensive one), I'm afraid.

Oh dear. I will bear that in mind. Perhaps I'll go on the curry route instead. I know we both do Aloo Gobi but there must be many other options.

It may have just been me (likely). The finished product just looked like a brain on the plate - and not a very intelligent one.

[Edit: I did have photographs but cannot now find them. I probably binned the pictures as I did the cauliflower].

It looked similar to this:

I remember the works canteen in Ellesmere Port back in the 80's. The "cook" would boil the cauliflower for about 60 minutes and then serve it with mashed potatoes (difficult to tell the difference). I asked her one time if she had considered just blanching the cauliflower. A few days later, she presented me with some cauliflower that she'd prepared specially for me - only boiled for 30 minutes!!

I'll have to try to write down a few things we make with cauliflower so it's an actual recipe. My wife has been making a simple sautéed dish recently with cauliflower and broccoli florets, grapeseed oil, garlic, and soy sauce. Simple, but really tasty.

Also, a potato and cauliflower mash.

One I've wanted to try was a pizza crust made with cauliflower.

For pizza crust made with cauliflower you mean the dough or the fill?

Yes, it's supposed to be part of a low carb diet.

Essentially, you run the cauliflower through a jucer to remove as much of the water as possible, then use the cauliflower pulp as the base for the "dough". Or you can process it in a food mill, I guess, and press out the water.

Mix the pulp with a little garlic, egg and some shredded cheese to help bind it, the pre-bake it until it sets. Add your sauce, cheese, and toppings, and bake again to finish.

And then there is the low carb cauliflower 'rice'...

Cauliflower rice? Do you press cooked cauliflower through a ricer or something?
