Absolutely, I think. In fact I was thinking of making some pasta with 1/2 semolina and 1/2 flour for the challenge. Its a while since I made home-made pasta. Cous cous is a bit different because it is traditionally simply semolina. The sort we get here now is the quick-cook sort which means its been pre-rolled with water to speed up preparation. Making semolina from scratch just entails a lot of soaking and rolling the semolina between your fingers. I've done that in the past, before the quick cook was available! And many people still cook it that way in Morocco.

I said semolina in any form. Couscous is made from semolina. If you make your own pasta and it contains semolina then that's ok too. I've been exploring possibilities myself and would love to see what other people come up with.

Lemon Semolina Cake
I'll add a photo later when I have made it (I rather fancy making it!) This is a combination of a couple of recipes. I have adapted someone else's... (now need to go back and edit my post because I forgot to add that bit) and used some of the recipe from my Lemon Polenta Cake... I've also made it dairy free, making it with oil rather than margarine or even butter!

Anyhow... here is my first submission for this round...
 
And finally... this one has me intrigued...
Baked Semolina Gnocchi or Roman-style semolina gnocchi (gnocchi alla Romana) as it is also known apparently! (https://www.cookingbites.com/threads/baked-semolina-gnocchi.9466/). I'm cooking it later on today so I may be able to get the photo uploaded before the deadline but here is the recipe anyhow, made dairy free for my needs!
 
I've had a little think about (and looked through the list at the beginning of the thread at least three times!) and I've decided the next ingredient should be Semolina. Seeing as it now turned midnight in the UK, the closing date will be midday on 23rd April UK time.

I believe you did indeed set us a challenging with semolina as the ingredient this time. You had me stumped for a while but you have certainly changed my view of it. I know the Moroccan Pita Bread have actually made their way into our meals twice now because we rather like them and they are so easy to make.

So, over to you now for the judging...

Well, a nice little selection and an almost impossible task! I knew it was a difficult challenge when I set it, but those of you who entered have definitely not let anyone down. I've read through the recipes very carefully, drooled over them, and imagined what I could substitute for a couple of the ingredients. I've even ordered some semolina which will be coming tomorrow morning so I can try them out :happy:

The cakes look delicious, the gnocchi look delicious, and I could certainly drink the smoothie if I changed a couple of the ingredients (those damn allergies again!). The batbout would go well with my dinner tonight - I'll have to save a bit for lunch tomorrow so I can try them out. And am I the only person who used to love semolina pudding at school - or maybe our school was the only one that made it how I liked it! Even the first café I ever went in when I worked in the City in the 1970s was done out exactly like a school canteen, and the waitress got so used to me having semolina for dessert she used to bring it to the table automatically with a glass of milk :laugh:

This is one of those occasions when I should be able to say to everyone that they are a winner, but unfortunately I have to pick only one.

So, after a lot of deliberation and a quick look through all the recipes again, I have decided that the winner is @morning glory with her saffron semolina with berries! :woot: I look forward to the next challenge
