seasoned with some cured quail egg,
Goat shanks, slow simmered, probably with fennel and potato.
How cured?
I cured the yolks with a mixture of mostly salt and some sugar for 3-4 days in the fridge, wiped that all off, and dehydrated in my dehydrator for about 2 hours. (You discard the whites.)
Uncooked yolks, you mean?
