Two days ago.

Chicken and Ham Pancakes from The Hamlyn All Colour Cookbook.

Except I had a bit of a 'doh!' moment. When I looked at the packet in the freezer I could see that I had written "AM" on the bag and assumed it was ham. So I had some cooked chicken and thought it was an ideal time to cross this recipe off.
However, once I'd defrosted it and opened up the bag 'AM' had expanded to 'GAMMON' so I actually had chicken and gammon pancakes. It does give me an excuse to try this again at some point though and get it right. The first time I tried this my notes said something like "Nice, but a little bland." I think I actually over flavoured it this time, Next time I'm sure it will be perfect. :cook::D

You have reminded me of how good stuffed pancakes are. I haven't cooked them for ages. They are good with spinach and cheese too.

Have you posted a recipe for it?

I used to make a dish called Enchiladas Veracruz. Haven't made it in a long time. Essentially, it was crab, bay scallops, and shrimp rolled in soft flour tortillas and baked similarly to your dish.

We had a really tasty Thanksgiving dinner here today. My wife and son cooked up a wonderful feast as I slept until about an hour before it was ready.

Roast turkey, gravy, haricot vert, potato salad, coleslaw, whole berry cranberry sauce, and the best sausage and mushroom stuffing that I've ever had in my life.

Looking forward to leftover sandwiches tomorrow.

Then we watched some football, and are now out shopping for Christmas gifts. So much for getting some rest.

For the finale, my wife made a chunky apple pie (will post her recipe later) to have when we get home.

There's also a pumpkin pie and apple cider doughnuts (both store bought), but I'm craving the apple pie, reheated, and served a la mode.
