Have you posted a recipe for it?

I used to make a dish called Enchiladas Veracruz. Haven't made it in a long time. Essentially, it was crab, bay scallops, and shrimp rolled in soft flour tortillas and baked similarly to your dish.

There is a recipe on the forum but I fear it has wrong quantities in it after making it again yesterday. I need to tweak it. But herein lies a tale - of which more later.
 
We had a really tasty Thanksgiving dinner here today. My wife and son cooked up a wonderful feast as I slept until about an hour before it was ready.

Roast turkey, gravy, haricot vert, potato salad, coleslaw, whole berry cranberry sauce, and the best sausage and mushroom stuffing that I've ever had in my life.

Looking forward to leftover sandwiches tomorrow.

Then we watched some football, and are now out shopping for Christmas gifts. So much for getting some rest.

For the finale, my wife made a chunky apple pie (will post her recipe later) to have when we get home.

There's also a pumpkin pie and apple cider doughnuts (both store bought), but I'm craving the apple pie, reheated, and served a la mode.

That all sounds fantastic. Please do post the apple pie recipe - and if you can take a photo all the better.:okay:
 
My favourite short pasta as well.

I saw a recipe for mussels carbonara recently. I hope to make it soon.

After sleeping late today (I feel like a different person - healthy and with energy, not just barely existing), we went out Christmas shopping this afternoon. I got a great deal on Callaway XR Steelhead irons today for my boy.

Then we went out to a Korean joint that specializes in Bibimbap and Bulgogi.

My wife had seafood bibimbap, my boy had bbq short ribs,,and I had beef bulgogi. Hot bori-cha tea for drinks.
 
Inspired by @Wandering Bob's sterling bread making I thought I would try something outside of my baking comfort zone (packet mix, loaf tin etc.). I found a recipe and tweeked it a little - 70% wholemeal, 20% white and 10% buckwheat flour. I found a packet of trail mix in the cupboard and picked out the fruit, leaving just pumpkin seeds and two types of linseed, and added some of this to the dough. I was quite chuffed how it turned out:

I just needed a lot more seeds!
