You should add the Balboa (named after Rocky Balboa since it's like a Philly cheesesteak) to your repertoire.

The steamed, buttered garlic bread is the key. You can do cheddar, but 'murican cheese makes it more "Rocky".
I think of England when I think of Cheddar.
So, American cheese is basically processed cheddar? Like Kraft slices? I use a medium cheddar that we slice ourselves..
 
We pulled out about half of what's left of our corn/chili and shredded pork/red mole tamales, and Craig made green and red sauces for them. We have enough of the sauces leftover for the rest of the tamales, so a freezer, don't have to cook at all meal is in our future!

We have a restaurant here that is run by an American and his Thai wife (she does all the work). They use what I understand to be "American cheese". Folks found it amusing that I would order a "ham and cheese sandwich without the cheese". "Why don't you just order a ham sandwich?" "Because ham sandwich is not on the menu so they will bring it with cheese".

You know, I never actually thought about what goes into American cheese. I just looked it up, and I guess it is a processed cheddar

While I don't mind using Kraft singles on something like a burger, we buy Boar's head American cheese which is sliced to order from a brick. It tastes so much better than the plastic wrapped singles.

This is the thing. Real cheddar doesn't melt like the processed stuff.

Paul Prudhomme's dirty rice and Emeril's collard greens. Not a pretty picture, gut very, very tasty.
 
Mac and cheese my way. Not a normal mac and cheese. You use tasso ham, shallots, garlic, and make a semi-loose cheese sauce using fontina, sharp cheddar, parm, white wine, and cream. Spinach and shrimp are folded in after the pasta. Like last night, not a pretty picture, but very tasty.
