What did you cook/eat today (June 2017)

I made lamb shoulder chops and Vidalia onions last night. Side was a nuked spud topped with herbed sour cream.

We went to New Mexico.
Had overly expensive barbecue. Won't go there again.
 
After a great day on the lake, we went out to a nearby restaurant. My wife and son both had trout in a lemon sauce, sides of southern style dumplings and baked apples.
I had cornmeal dusted haddock, southern style dumplings, and collard greens.

We shared a giant brownie s'more with vanilla ice cream,for dessert.

Everything was delicious. We will be going back soon.

What are southern style dumplings and were they served with chicken or squirrel? @TooSweetForMe any ideas on what he is talking about?

If you do a google search, there are hundreds of recipes for pretty much the same thing. Not hard to find.
They are usually served with chicken, (chicken and dumplings) but these were just in a chivken gravy.
 
Quick and easy supper tonight since hubby had taken over the work area of my kitchen today. No complaints from me, though, since he was installing a long-wanted ceiling fan. :hyper: If it was long-wanted, what took so long? you might wonder. Well, our motivation was a two-day 10% off offer from the store we bought it at! Now that it's up, the weather will be cooling off...

Anyway, dinner was onion-mushroom-Monterrey Jack cheese omelets. I added a few slices of tomato to my half. We finished off the last of the ham, and had cornmeal muffins with it. I grilled my muffin. So good!

Catching up from the last couple of days:
Thursday was an unexpected day off, so to celebrate we went to the pub. Starter was a sharing platter of battered belly pork with a Thai dipping sauce - this was mind blowingly good. Picture taken after half had been eaten, so a good portion for £4.50:

Main course was a hand pressed burger topped with bacon and a local blue cheese, accompanied by fries with Parmesan and truffle oil. Big mistake. Pretentious and unnecessarily complicated. Sometimes, keeping things simple is the key. Earlier in the week I enjoyed a cheap, basic cheeseburger far more.

Yesterday, I achieved a long held ambition - a home made pork pie. I confess, I am a bit of a pork pie addict, and there are huge variations between good and bad examples. Also, like many traditional dishes (I am thinking sausage here), there are so many modern and totally unwelcome variations, so I have for many years wanted to have a go at a traditional Melton Mowbray pork pie. This was the first time I have ever made hot water crust pastry as well, so the result wasn't pretty. However, it tasted rather good. The filling again was tasty, but not pretty, and consisted of a mix of pork shoulder and bacon (coarsely ground), belly pork (finely ground), salt, pepper, allspice, celery salt and garlic powder. I made the mistake of putting too much filling in the pie, so there was very little room left for the jelly, which is poured in after the pie has cooled. Overall, good taste, poor execution, but will definitely keep trying until I perfect it.

This was lunch yesterday at Establishment. The skewers were shared with a friend & I had the chicken burger which was pretty good - filled with a crunchy shredded cabbage salad inside it.

The rest were enjoyed by others, the Caesar salad will be my choice next time I think.
