Next on my To Do list for my sous vide machine: a sous vide is almost literally designed for treatment of finicky cuts of meat. I imagine they were impossibly moist and flavorful.
First meal back home, not visually appealing but very tasty. Pork chops, mashed potatoes, cauliflower cheese, carrots, parsnip chips and a mustard sauce. Chops done sous vide 64 deg C, 40 mins then browned on a hot skillet.

Yes, they were very succulent. Pork chops are probably on the limit of what I would consider tough cuts, i.e. worthy of cooking sous vide.View attachment 11166

Stop boiled rice, I'm fine and I'm hungry, thus lunch today is mini aubergines pizza.
