This stir fry was excellent. So delicious that is have had it again if I could. But I healed too well and ended up being discharged without inpatient rehab.
Escaping hospital, we ended up needing a petrol station lunch (I was discharged on Good Friday which meant all the shops and cafes were all closed, so petrol stations were about the only thing open and this particular one sells lots of vegan "hot cabinet" foods. You'll find a statue of Buddha in the forecourt of the garage and a certain times of day prayers being taken. So it is one place we know that we can usually unless they are sold out, get vegan fast food. These were the last 3 sausage rolls and it was only 1pm. They also do an excellent range of vegan ice cream (both in big tubs and on sticks).
This was the day my "stitches" came out. My appointment was 11:30am and we live 1½hrs drive from the consultants office, so lunch was very definitely eaten out. I had hoped to go to my favourite Vietnamese vegan restaurant which is just around the corner, but we couldn't nearby, so we bailed to the (mostly Ukrainian) cafe we often use that covers all food categories and who know in seriously allergic to dairy so don't actually need reminding (unless we don't recognise the member of staff).... lunch was good.
Hubby made cauliflower and I made the "cheese"... there are a few carrot slices, cauliflower leaves and some mock duck as well.
The sauce is something hubby isn't very good at making for some reason. It probably has a lot to do with the fact that you have to taste it and adjust. Something he's not good at! Lol.
And because we only have the 2.2L jug for our Vitamix and not the 1.4L jug, there are another 6 portions of the vegan cheese sauce on their way to the freezer.
