What did you cook or eat today (April 2023)?

I needed cream of mushroom soup for a recipe, and I didn't have any. So, I made some. Now, I wish I had made more.

1. Sauté shiitake mushrooms along with chopped green onions and thyme in a pan with butter. NOTE: if I had made this with the intention of eating it as soup, I would have reserved maybe half of the mushrooms.

2. Dissolve flour into chicken stock. Whisk until fully combined.

3. Add mushroom mixture to the pot. NOTE: half of the mixture would have been reserved for later. Cook uncovered for a few minutes. Pour mixture into blender, and blend on lowest setting for a few seconds. NOTE: this is where I would have added the unblended mushroom mixture back.

I'm not sure if I'll post the whole recipe just yet, but I'll show the results here later today.

I just realized this can be a dairy-free recipe if margarine or oil is used in the first step. I would probably want to add milk to serve this as a soup, but it could be done without the milk and still be tasty.
 
I had to get my bike serviced, and I realized there was a California Sandwiches (local chain of Italian sandwich shops) near the bike shop. I haven’t had a California Sandwich in forever, so I went over there and got the breaded eggplant sandwich- hard to tell from the photo, but it’s the size of my head. I’ll be full for the next week and a half!

My Easy Shoyu Chicken, My Quick Cucumber Kim Chee (or kimchi, whatever) and the ever present steamed White Rice (shoyu & furikake added to the Rice after the glamour shot).
This is one of our favorite Hawaii-Style meals.

Make a soft bread dough, roll out, and top with za’atar that’s been mixed with olive oil and a smidge of lemon juice.

Bake in your hottest oven for just long enough to cook it through. You don’t want crispy you want pliable. Eat with tomato, cucumber & red onion.

Ambivalent, I think. Something I won’t throw out immediately, but something I won’t replace when it’s gone.

It had a certain…funky taste I didn’t really care for (I imagine some would describe it as an earthiness). The ingredients on the jar aren’t listed out, except for sumac, but it had a definite cumin-like taste.

Middle Eastern herbs/spices are hit and miss for me. I like the flavors of some, but really dislike others. That's better than Japanese flavors, which I almost always dislike.

Cup of earl with 5 anzac biscuits. Bought yesterday from coupland bakery. Really really yummy.
I bought 2 packets . Along with choc chip ones. Dont know the cost . Never took notice.
