Gage stands for plum. There are a number of variants. It's thought to be the original plum.
This started as a bastardized pissaladiere, with peppers instead of anchovies, and a few things went wrong along the way, but it turned out a lot better than expected.
Baked for 30 minutes at 425F and the onions, though not as browned as they should be, but they broke down nicely over that longer bake.
Also, that thin crust came out like the coating on a candy apple - crisp and glasslike, it nearly shattered with each bite.
