Served over a bed of (microwave) ancient grains, green beans & pan juices spooned over.
Needs a squeeze of lemon juice as it's a bit sweet for my tastes but still delish
Note to self: check in here if I'm ho-hum again. Love seeing what others are doing

Less scorchio over here today, so I’ve made an oven-baked onion frittata, lighter and also easier to make since you don’t have to flip it up in the frying-pan
