Stuffed cockerel with boiled minced chestnuts and minced aromatic herbs - bay leaf, sage, juniper berries, garlic, rosemary - and few diced pancetta. Paired with purple potatoes

Apart from the pancetta this sounds like a very British dish.

Yes - chestnut stuffing is a classic British stuffing for poultry and the herbs and spices in your recipe are typically used.

We are 3 hrs plane trip east of Sydney. We call it the ditch, the Tasman sea between us. I love Australia and Australians. I normally visit in our winter and love the gc. (Gold Coast) and Queensland up to cairns. We've driven it about 4 times over 10 to 12 days. Fave spots are Hervey Bay, Yeppoon, eumundi and Caloundra.
