Surimi stuff then? I quite like it in its own right but crab meat it is not!


I love imitation crab. Or “seafood highlighter” or “seafood extender” as you’ll see it called.

It’s quite looked down upon here in Australia but it will gain popularity now as it’s loved in Japanese & possibly Korean cuisines.

I always make a salad of it with celery & spring onion + plenty of mayo & lemon juice.

And for those following along at home, yes I “hate” celery, but it’s necessary in some things.
 
finally got chance to jar my Shatta today. I'm not sure the temperature has been warm enough for It to ferment properly but, hey ho...


I also had chance to do the 3 month check on my Chickpea miso...
We've mashed it much finer than most cluckchickpea miso that we've previously bought in jars. Another 3 months and it should be starting to be ready !

Shatta is a popular chili sauce throughout the Middle East, especially in Lebanese, Jordanian, Syrian, and Palestinian cooking.

It is traditionally made by pounding fresh red or green chilies with salt and allowing them to ferment in the sun for a few days before combining them with extra-virgin olive oil, spices, and herbs.

Recipes are various and numerous, and there isn't really a set recipe as such, but...

it should have been a garnish to the Lentil & Aubergine Stew with pomegranate molasses that I made easily in the week. only I didn't have any, so I set some going.
