Roast Guinea Fowl, potato pavé, sausage/bacon stuffing thing and roast veg.

The pork was my responsibility today so I sat it on a bed of smashed sage with sliced nectarines & onions. The oven at the new house is slow (no fan) & the controls have no temp indications left so it’s a bit of guess work. I put it in for an hour at maybe 180°c then cranked it up for 30 minutes to 220°c and then full whack for 30 minutes. It came out of the oven, I tipped off the fat, wrapped the bottom in a towel and jumped in the car. With my OH driving carefully and the pork on my knee.

It was perfect. The resting juices mingled with the trivet and the meat itself was very moist. Perfectly cooked.
 
A few years back we went on a schooner out of Husavik, Iceland on a very successful whale watching trip. On the way back to port the crew broke out the hot chocolate and cinnamon swirls, then the captain came round putting a tot of rum in the drinks. Since then it has been our tradition to go for a good walk on Christmas morning and return for the same.
