My homemade crayfish cocktail, plus bread with homemade beurre maître de Paris

Then on to thyme butter baked pheasant with cranberry sauce, gratin Dauphinois and haricots verts


Now we're making room for the Eton Mess. Pic coming later.

We bought Italian flatbreads from the supermarket and bunged the toppings on, doing it with tortillas would give a similar result, a thin very crispy and light base rather than something doughy.

The main meal will be served this evening.

Christmas Eve Dinner for us three, my version of The Feast of the Seven Fishes.
Starting from the left:
Lobster Tail with homemade Compound Herb & Garlic Butter
Kamaboko or Steamed Fish Cake with Shoyu and Wasabi for dipping
steamed White Rice
Green Lip Mussel Cocktail
Salmon Poke
Shrimp Cocktail
Scallops in a Brown Butter & Sage sauce (my very first go at Scallops and Mom said they were perfect-DH & I are allergic)
and in the middle is Mini Pizzas with Anchovies (or not-your choice)

Dessert was the last of my homemade Moose Munch (Caramel Corn & Peanuts with a dark Chocolate drizz)

That was also my first try at making Salmon Poke.
Usually I make everything under the Sun but that

I was quite happy with the out come and so was DH

And so to the main event:

Smoked salmon mouse and crab parcels.

Beef cheeks in red wine.

Then strawberry and raspberry Eton mess.

Prime rib, horseradish sauce, potato parsnip latkes, mushroom bread pudding and roasted grape tomatoes.

Christmas Dinner, homemade Cheese Raviolis topped with Sausage, Peppers & Onions in a Red Sauce.
After the glamour shot, I added grated Cheese and a drizz of Extra Virgin Olive Oil, the good stuff from Costco!

what’s ‘pickled pork’?

Something that is melt in the mouth tender. Pork loin fat on I ejected with saline and ? Stuff butcher said they use. I think its kinda like corned beef?? Ans cured?. Boik it slow for 3 hrs changing the water 3 times. Served with apple sauce. My fave meat xmas day.
I cooked a 2.2 kg piece, there was leftovers for a sandwich I just had.
10/10 rest of family coming soon for leftover.
