What did you cook or eat today (February 2021)?

Baby back ribs rubbed with a wet, mole type paste then Craig cooked on the grill. Black beans and green rice for sides.

"Soup and Sandwich" night here. Boar's Head ham and cheese sandwich with Dijon mustard, some low sodium chips (crisps), and a big mug of hot chicken broth as my beverage/soup. I just discovered these new chips today, and they are quite good, and well within my sodium limits. The broth had more sodium than the chips -- but was perfect for this bitter cold day (25F/-4C).

For those not in the US, Boar's Head is a premium brand of deli meats, cheeses and condiments here. I decided to splurge a bit today.

I'm in New Zealand. No lock down here, pretty much normal here.

Off topic - We're similar (Australia) though we have to register everywhere you go. In the ACT, (aka Canberra) it's actually the law now that you have to digitally sign in to places you visit (not just restaurants and cafes, but physio and shops in general are included. Most just use a QR code and your phone remembers who you are, do it's a very quick process, but it's a legal requirement. I'm not certain exactly if it's the law on NSW but it's a different app and it requires you to sign in and out of where you've been, again via QR code.

The only exception is where you're the patient and actually have an appointment. But they still encourage you to sign in independently as well...
 
One of way too many meals eaten away from home this last week. Next week won't be much different.

This one was a suit down in a cafe job. We were both exhausted and dehydrated and needed to stop and pause before the next round of medical tests, results or appointments... I've lost track of which one this was other than knowing which cafe it was. They have recently amended their menu to include a vegan option in addition to many vegetarian options they have.

Hubby had a vegetarian option, beetroot risotto. I couldn't try it because of much dairy in it. I mighty have been closer to an emergency hospital but I could see the cheese on it from the word go. :(


I had the vegan option naturally. I had been hoping for the excellent light option I had last time, but it was either a breakfast option (brunch went until 11am) or the menu had changed again. It was October last time we were there.

So instead I had the stuffed aubergine (eggplant for those not of UK origin). It was excellent and I was not at all disappointed, though I didn't need to eat anything more until the following day!

Apologies, I should have rotated the plate to get a better shot, but hubby was giving me those looks again!

We've also eaten out at the Vegan Vietnamese restaurant we eat at a lot. That was excellent too. We both had something we'd not had before, hubby going for the fisherman's hotpot which surprised both of us. I don't like fish flavoured tofu/sietan/meat replacement but this was really good. It was slightly fishy or ask least according to hubby it was. I thought so too but I'm only guessing never having eaten fish (except for a peculiar white salmon omelette had in Belarus which I left).

Other meals out this week included a local (please take that in inverted commas, it's a good 40 minutes drive from home, but is actually the 2nd closest petrol station, the other being in totally the wrong direction for anything other than an emergency I'm out of fuel and so are all 3 of the 25L fuel cans in the garage) a vegan Cornish pasty, 2 vegan sausage rolls and vegan Thai green curry pie (very good, all of them). They are actually from the local petrol station that is run by a family of Asians with a major dairy intolerance (as well as cultural taboos to meat/ fish on general) so they have a really good selection of vegan 'fast food' and vegan ice creams alternatives (in fact their selection is better than the local major supermarket! ). The meals from there are actually better than anything IKEA now has since they changed their veggie balls (very good) to plant based balls (can't stand them). So we no longer use IKEA cafe as an emergency food stop but drive 10 minutes up the road to a petrol station instead!

I can't think of anything else right now, but know we have eaten out more that just that this week.

It's anyone's guess what next week brings tbh.
 
Because we are having our aniv dinner tomorrow, and with the cold weather. Mrs B pick over and soaked the beans last night.
Todays version of slow cooker baked beans. A big handful of Prsut trimmings, chopped onion and garlic, left over parsley, mustard, tom ketchup, date syrup, soaked beans, tom sauce.Add water to just cover the beans. I only stir after a few hours of cooking.

The best way to cook fried mashed potatoes, in my opinion, is one or two days later. However, I cooked and mashed these earlier today with raw chopped onions and then put them in the fridge for a couple of hours.


Then pan fried them in very little sunflower oil until browned and served with air fried sausages and a little brown sauce.

 
I used a Stilton. The shop was sold out of others. A shame as I think a creamier blue would have been better.

The last time I bought Stilton here was about 16 years ago. It was the equivalent of £45.00/kg!

I bought 100 gms.

Beetroot risotto, oh what a lovely dish. This is something I want to make sooner or later!
