Thank you. Yep, you made the idea just perfectly since 'in Purgatory' is referred to another dish we have here called 'Eggs in Purgatory' - referring to the fact that the white eggs, sorrounded by the red tomato sauce, look like the Purgatory’s damned souls, wrapped in flames.
Same thing for mozzarella.

A North African version of eggs in purgatory is shakshuka, which is something I make from time to time.

Yes I know there is another version of it, I think they use also veggies? I would try it sometime

I remember it having peppers in it, and onions. Not sure about other veggies. They are both tomato sauce based. I just know it tastes good, as I am sure the Italian version does.

Actually, shakshuka or chakchouka is much more complex. These dishes are like casseroles or stews with sunnyside up eggs cooked on top of them.
