Was hankering for a burger, but after running tactical strike errands, was just not feeling like stopping anymore, or cooking so grabed McD's on the way home. It was meh. Better dinner tomorrow night for sure.

Asparagus Wine and Cheese Soup.
flyinglentris inspired me to use wine in soup with his recent entry to the recipe challenge. I have made asparagus soup many times before, but never like this. The wine brings an interesting character to the soup that was never there before. I used Parmigiano Reggiano, but I believe other cheeses would’ve also worked quite well.

Presentation-wise, I know this isn’t the greatest. I used fresh asparagus tips, which I know are lost in the soup. But, this is okay. I also don’t need to post the recipe because...I’M NOT IN THE RECIPE CHALLENGE!! Oh, that sense of calm feels so good right now.

Very cold and grey yesterday. So last nights dinner was our fav winter warmer, chicken back soup with tortellini (mushroom and truffle) and corn bread. Pud was a blood orange in need of a transfusion. The weather has changed today for the next seven days. 11 hours of sunshine is forecast fore today, temps building up to 20c by Sunday.

How do you prepare your wings?

I've never made cornbread in a loaf pan but I like that idea.
In the summer I use the Weber. I just bake them till the are crispy , then toss them in a simple bbq sauce with added Tabasco.Then put them back in the oven till I smell burning. What you call cornbread made with buttermilk and baking soda is called Proja. This corn bread is 75% high protien flour 25% fine corn meal. yeast, water, olive oil. We are making a London Rye loaf tonight with caraway seeds to go with paneed veal schnitzels.
 
This looks like a simple recipe and I have all the ingredients, especially a tub of ricotta that is going nowhere in my fridge.

Can you jot up a quick recipe for this and post it.

I’ve boiled potatoes first, then mashed.
I haven’t boiled nor blanched spinach, only added them in the pan with oil (EVOO for me). Once ready, I have mixed them with Ricotta and mash potatoes, seasoned to taste. Then I’ve formed disks with a glass, placed on a lined baking tray with parchment paper, a drizzle of oil and grated cheese, baked 180 c for about 15-20 mins (Fan oven)
 
You post that pork and tomatoes sausage on a regular basis. It sounds like something I would really like. I haven’t looked really hard. But, I need to look for this in one of the stores near me.

It suits me. I prefer my sausage to only be mildly spiced and that one is. Locally made (Bangkok) ฿300.00/kg (about US$10.00).
