Super Garlic Chicken Fried Rice (and I mean heavy on the garlic). Also, a slide of teriyaki (garlic) tofu.

In my opinion they are inferior to saltwater prawns but beggars can't be choosers 500km from the ocean. My main experience with excellent saltwater prawns was in Doha, Qatar back in the 80s and 90s.

Very interesting. Maybe I don't need to put a lot of time and effort into finding freshwater prawns. Gulf shrimp (saltwater) are pretty easy to find here, although wild caught Gulf shrimp cost more than shrimp farmed in Asia. Go figure, 300 miles vs halfway around the world.
