As mentioned in another thread, very busy day with doctor's appointments, so it's frozen Pizza and a Salad

Not bad for convenience food ... just don't look at how much sodium is in there :facepalm:
 
Juggling knitting club and a doctors and a consultants appointment and trying to cook might not have been my best move.

The sausage rolls were tasty. The flavour great but they filling was very dry, too dry. So they need more work and the miso glazed aubergine had a slightly charred taste because I didn't quite get the guess at the oven timing correct (aka we were late home and it hadn't turned itself off).

On the bright side the snowpeas were spot on lol.

 
I prepped vegan buddha bowls last night for today’s lunch. Quinoa, edamame, carrots, roasted broccoli and some fried tofu.

Very tasty, but the dressing tasted quite salty to me - husband may have neglected to make sure the soy sauce was the low-sodium kind.

Yes, my wife’s birthday is on Valentine’s Day. This always wrecks things for going out to eat, because all those other annoying couples are out there celebrating a less important occasion.

My wife’s mom bought a cake for her, but forgot to get icing. So, I made some myself:

1 cup confectioners sugar
3 tablespoons butter
1/4 teaspoon vanilla extract
1 teaspoon milk

1. Cream the butter with a mixer, which is challenging because it’s such a small amount.

2. Mix in the vanilla extract and milk, finally, mix in the sugar until it’s combined to form an icing.

3. Scoop it into a piping bag. Or, if you are me, scoop into a plastic bag. Cut a very small portion of the corner out. Enlarge if desired.

4. Carefully write your message to your loved one.

Well… It’s the thought that counts, right?
