What did you cook or eat today (February 2024)?

Which bit is chicken?
It’s covered in a lot of stuff, that’s for sure (pimento cheese and garlic mayonnaise, as well as pickles, lettuce, and bacon), but I circled some exposed bits:

It was quite good.
 
I'm behind so posting a couple days worth of food instead. All following my RD's guidelines:

Sunday was a day with sushi , always a good day! ❤️ otherwise I had a bagel with cream cheese, oatmeal & almonds for breakfast . And a tuna salad for lunch.

I need to eat a little less nuts, haha! Putting my pics out like this showed that. Otherwise this was yoghurt with blueberries and kiwi for breakfast, healthier brownies for snack (no sugar or fat), pita with homemade tzatziki for lunch and dan dan noodles for dinner.

Dinner was sauteed garlic mushrooms & chicken with roast potatoes and veggies. Lunch was a salad with tuna, mozzarella, and olives.
Snack was yoghurt with kiwi and blueberries. And dinner another pita with cucumber, almonds and tzatziki.
 
Have been in the kitchen all day and seem to have little to show for it 😂

Pressure cooked and shredded ribs and slightly undercooked some white rice for tomorrows special fried rice.

Took the remnants of the Saharan Fudge (sounds exotic but thats what Mr SSOAP called the peanut butter fudge I made cos it’s a bit dry 😂) and made some more espresso syrup to put in some dairy free icecream. The sweetness of the syrup and the cream would go well with the crumbly slightly dry (cough) fudge. The repeated taste testing of the unfrozen ingredients was promising 😋

The gravy for the gravy n biscuits. It was confirmed I need to stay away from the name until after it’s been eaten by Mr SSOAP’s face when I gave him a sample 😂 He was horrified and then eventually came looking for seconds 🤣

I know I know quite a horrible pic 😂 but if you’re a UK sausage buyer and need sausagemeat the ‘Heck 97%’ brand skins are so thick they peel off in one easy motion!

Chinese night for us. I made a chicken and veggie stir fry on sticky rice with a home made stir fry sauce, pork egg rolls and pot stickers. Oolong tea to finish. Sorry no images. I barely found time to cook it and eat it. Back to work. The plantains have finally blackened so they will disappear with tomorrow's breakfast.
