What did you cook or eat today (January 2022)?

Not a lot. Cod loins are thicker pieces from larger fish..cut from the thickest part of the fillet

Yeah, I know that much. Is it noticeably better?

BTW, I never see it in stores here, so I assume I'd have to pay a lot more to get it from a fishmonger. Is it worth paying more to get that cut of cod filet?

Well, it is a separate product so yes you would have to source it out like that..Personally, I find them a bit too thick for fish and chips..they take longer to cook and then render so much fluid that the batter can get soggy from the inside unless you really ring them out and dry them before the flour and batter..I think anything thicker than an inch or so is too much..I like the bigger pieces baked and in some kind of butter sauce. Kind of like using a 2 inch rib eye for a sandwich..over kill...lol
But, I've been craving fish and chips and that's all we had

Homemade fettucini with a brown butter/robiola cheese sauce, and shaved truffles obviously.

Incredible.I had never tasted Robiola cheese until 3 weeks ago, when I bought some on the local Kroger supermarket.
It was good, but not something I´d go crazy about.

Something new-to-us, I saw this on a You Tub video and searched it out.

Along with my Make-Ahead Twice Baked Potatoes and Green Beans in herb & garlic compound butter.
I did the chicken in the Air Fryer, not bad, I mean there's Bacon in the Potato, there's Bacon wrapped around the Chicken, I should have put some more Bacon in the Beans while I was at it, what's not to like about Bacon?

Tuna bruschetta with caper aioli, chile oil and hard-boiled egg.
Porchetta with pickled shallots & dijon mustard.
Goat cheese & honey.
Linguine alla vongole.
capellacci with short ribs, shallots & thyme
Bardolino.
Olive oil cake
Ricotta Doughnuts.

Yes - that´s right. We ate out at Sotto - probably the best Italian food I´ve ever eaten.

You could make that chicken yourself, I'm sure... Its a ballotine and not that difficult to do.

We don't get them that big where I live. I've bought them maybe 1.25" thick, but we like to cut them into square chunks and fry them in a panko bread crumb dredge. I've never done them in beer batter.
