We had split pea and ham soup (no picture). Baked apple for dessert.

Those look tasty! We ate a lot of baked apples when I was a kid. I haven’t made them all that often myself, though.

Do you remember Swanson's TV dinners from the 60s? They usually had baked apples in them. I loved that as a kid.

Yep, but the ways those looked, being sliced, reminded me more of fried apples. We ate a lot of those, too (and dried apples- we ate a lot of apples!).

And they had soup and lots of varieties. I liked the German one with sauerbraten and Bavarian beans, the Mexican one with tamale and the sweet corn, meatloaf with Tomato sauce. There was more vegetable, desserts, and carb choices like tater tots. Now they have crap.
 
Well it's settled then!
Lunch tomorrow is some kinds of Potato something-Chili-Cheese and extras
I just bought another bag of frozen Fries and Tots, Sour Cream, Green Onions, Sharp Cheddar Cheese and I just took inventory again of the deep freezers, and I have 4 more two cup servings of my homemade Paniolo Chili :hungry:
Well, the Chili hasn't de-frosted enough - I forgot to take it out last night :(
That's okay though, I improvised

Heated the Tots in the Air Fryer, topped them with shredded Cheese right as they came out ... DH liked it fine!
He suggested Salsa next time and I said my Paniolo Chili, "YEAH!" I was going to make Chili & Rice for dinner tonight, but we could do French Fries or Tater Tots ya know ...

I'm joining my Neighborhood Gal Pals for Happy Hour in a bit, I know that one of them will take this and try it and possibly pass it on as well.
 
Husband had bought some frozen appetizers (Jamaican meat patties and samosas) for New Year’s Eve snacks, but we ended up getting together with friends so we had them tonight for dinner instead.

I also put together some chickpea salad sandwich filling for lunches this week. I’m starting to go back into the office a couple days a week and I need to take lunch with me. There’s no cafeteria in my building and going somewhere else to get food will be too tiring for me right now. I’m walking a bit but I get tired very quickly and my ankle starts to hurt if I’m on my feet too much.
 
I 'made' evening meal so everything was weighed out. Hubby thought the packet of ravioli was for 2 portions! Not likely... He can have another portion tomorrow!

So vegan ravioli (shop bought), home made sorrel & macadamia pesto (I did weigh it and that's only ⅔rds of a portion. I try ½ a portion tomorrow) and honey soy tofu for protein.

I will be cooking cold soups in the coming days. It was really too warm for ravioli tonight at 28°C... but there's another portion each tomorrow because I'm too busy tomorrow to sensibly cook.

PS, it's a big bowl. There's 100g of tofu and 100g of ravioli in that bowl!
 
The internet was soooooooo slow this weekend, it was taking two days to send pictures to my e-mail. Anyway, we finally managed to get hold of some fish this weekend - a couple of pieces of haddock - so that was Saturday´s dinner sorted out. Then on Sunday, we had a complete sort-out of the veg drawer in the fridge and made a totally vegetarian Sunday Lunch. Roasted potatoes, parsnips, carrots, red onion, brussels sprouts, cauliflower cheese and even a ball of stuffing!!
