We had a sheet pan meal, Garlic-herb butter chicken with potatoes, green beans, and mushrooms. Easy, minimal mess, and delish, a definite make again!

I LOVE the ease of sheet-pan meals. I really should start making more of them.

After last week’s indulgence for husband’s birthday, I need to watch my waistline a bit so I had this big ol’ vegan salad with tahini dressing (not pictured) for lunch.

I just combined whatever I could find in the fridge.

This wasn't so bad. The sauce is a 2:1 ratio of broth and butter, just enough to give the buttery taste.
