What did you cook or eat today (January 2024)?

We had an easy dinner. DD picked this up from market and I made jasmine rice (butter on mine). It was good and will have again. I didn't get a picture because my phone was in other room.

I like Ranch on some things, like salads. But watching Gen-Z guys on YouTube, and they put Ranch on everything!

It’s everyone - I’m at the bar, couple older than me sat down and ordered:

“Could I have the taco salad, but I want ranch instead of the southwest dressing, and some on the side.”
“Tavern pizza, and ranch on the side too, please.”

Now I gotta sit here and watch them eat it. :laugh:

I’m going to be needing that ranch recipe of yours before it’s cemented in my mind as the tomato ketchup of America 😆
 
Busy at the mo so I had shop made stuff for lunch, harissa lamb shanks that were a substitution and wow it was a good substitution, with shop bought carrot, swede and potato mash.
I bunged some broken up baby corn in with the lamb shanks and microwaved the mash.
It really was a lovely surprise how good it was, I wouldn‘t be ashamed to serve it to other people. 40mins of no effort and a meal that had a bit of a laboured over with love Sunday lunch feel to it.

While it was doing it‘s thing I made some sandwich filler for this evening. I fried some king prawns in garlic and while they cooled I de-seeded and diced baby plum tomatoes and cucumber which I mixed with the prawns and a dollop of aioli.
I shredded up gem lettuce and stored that separately as it always goes limp if added too soon.

My little gluten free roll, yum yum..

Those are dump nachos. The chips on top are loaded, and the ones underneath have nothing on them. Restaurants love them, because they take almost zero labor to make. Pile up some chips, dump chili and cheese on top, and a handful of jalapeños, and you've got a very profitable appetizer.

The original nachos, invented in Piedras Negras, Mexico (on the Mexico/Texas border), were nothing like that.
