Today’s desk lunch - a vegan salad I made with ingredients that I selected based on strict criteria, namely, they happened to be in my fridge last night.

Romaine lettuce, some chopped cabbage, red pepper, roasted chickpeas, and an almond butter dressing.

I like your criteria and the meal looks great.
 
I love the look of that and the combination of olives, oranges, dried fruit (cranberries, right?) and nuts. Crunchy, acidic, sweet, juicy - hits all the right notes!
Thanks - I must admit, though, that those are blueberries! And yes on the cranberries.
 
I doing this later. When cooking I try to think ahead. So when I made mash last night I made a bit more.
So tonight I have taken sausages out. I will cook then make stuffed sausages .
Then split longways and stuff with cold mash. Put cheese on top and tomato sauce. Heat in oven.
