What did you cook or eat today (January 2024)?

I made a free style curry with chicken, oyster mushrooms, onion, garlic and ginger.
I bought coconut yoghurt by mistake. Thought it was plain, and used that.
That stuff is much much sweeter than I expected, but I had to use the whole tub as I overdosed my dry flaked chili.

Not my best cooking effort, but still pretty edible
 
I'm feeling pretty lazy. I took some Ramen and added some shiitake mushroom sauteed in garlic butter and fortified with umami powder, wilted some spinach, toasted sesame seeds and add some fresh raw red onions as a garnish.

You might have re-define what lazy is, cos that‘s not my idea of it 😆
 
To try out the easy peel pressure cooker method LissaC kindly posted I had to then do something with the eggs!
I’d been hankering after Pikobi Eggs for a while so it was a no brainer.
They photographed well, I think the newer iphone camera is rather excellent.. rascal hint hint 😂

First up normal Pikobi Eggs, this is a basic but very tasty recipe from the unlikely sounding source of the ‘Star Wars Galaxy’s Edge’ cookbook.

Then as I am thinking of doing the boys Star Wars themed food when their exams finish end of next week I decided to go up a notch into the Cantina (the bar in Star Wars) 70’s style, no droids allowed.

These eggs weren’t my usual. When I redo them I‘ll use Burford Browns for a more vivid orange.

If you’re wondering if the pressure cook easy peel method works yes it does! I’ll write that up in a tiny bit more detail on the thread it was being discussed on later 👍

Preparing for Lunar New Year too - Chinese BBQ Pork aka Char Siu, which we ate year round and frankly, I'm just about out of the stuff!

A new batch of Jook or Congee for the deep freeze, I love this for breakfast!
 
All of the holiday leftovers have been eaten. Night before last I made crispy skin salmon with roasted broccoli and salad. Last night I made Stinky Feet Chicken thighs. My Niece named the chicken. It is Balsamic marinated, braised chicken thighs. It does kind of smell like stinky feet. Roasted cauliflower and salad. Tonight George is on his own. There is left over chicken, cauliflower and a link of boudin.
Honestly, I am tired of cooking.
