All the fancy recipes for mashed potatoes command using white pepper, so you can’t see the specks, but I like seeing the specks in there - reminds me of specks of vanilla bean seeds in vanilla ice cream, which all the fancy chefs point out as a positive…just goes to show how arbitrary all the “rules” are - I think those taters look delicious!
I just prefer the black pepper flavor, that's why I ignore the fancy recipes. I'm not at work so can do what I want haha
but you're right, if you want the mash to look completely smooth white pepper is better.

I just bought some for .78 cents apiece and I live quite far from where they were grown (Mexico). I don't even know how they can ship them all the way to OH and still make a profit.
My DH doesn't like plain mashed potatoes, either. I like them with just a little salt, pepper, and butter.
